Maple Banana Muffins

Makes approx. 16 medium or 10-12 large muffins

Bake 375f conventional oven approx. 18 – 24 mins.

Ingredients 

  • 260 gr. whole wheat pastry flour
  • 1½ tspns. baking powder
  • ¼ tspn. baking soda
  • ¼ tspn. fine sea salt
  • ¼ tspn. ground cinnamon
  • 360 ml. mashed bananas (approx. 3 lrg ripe)
  • 2 lrg. egg
  • 120 ml. pure maple syrup 
  • 105 gr. light brown sugar
  • 80 ml. homo milk
  • 60 ml. corn oil
  • 1 tspn. pure vanilla essence
  • 75 gr. chopped pecans
  • brown sugar to sprinkle
  • quick cook oats

The Method

Sift all the dry together 

In bowl add the eggs, syrup, brown sugar, milk, oil, vanilla, and pecans. Add the dry and don’t over mix. Have muffin trays with liners ready. Makes about 10 large ones. Fill the tins half full and garnish with slices of bananas, brown sugar and little cook oats. Bake/cool.

    Thank you for this recipe because I have the wholewheat flour and all the ingredients.They will absolutely be delicious.They have to be with all those lovely ingredients in them like bananas pecans and maple syrup.
