Do you get tired of the same old same old meals and sides? I know I do and I bet my kids would say they do as well. We use a lot of dips and condiments in our house. I often try to think of other ways to add flavour without adding all of the bad stuff. You know like fat and calories. With summer quickly approaching I am excited to try out this Cucumber Chutney recipe. The more colour in your diet the better. This sweet and spicy combination is surely going to be a hit.

Heat cooking oil in small saucepan on medium heat. Then add onion and red pepper. Cook for about 5 minutes, stirring often, until onion starts to soften. Add the rest of the ingredients except cucumber. Stir. Simmer, uncovered, for about 5 minutes until liquid is evaporated. Remove from pan and place into small bowl. Add cucumber. Stir. Makes about 3 cups Serve with fish or chicken grilled. |
