Leftover Turkey – Casserole

If you are like me you have way too much turkey filling up your fridge. So why not use it, eat it or freeze it? I plan on making a soup later today and freezing it for the kids to eat after school. Yesterday I made a casserole and today it is lunch.  All I used was  leftovers and it is so easy to do. You can do this with any roast, chicken or turkey leftovers.

I had mashed potatoes, corn, gravy, and turkey. No stuffing was left.

I made a layer of mashed potatoes at the bottom of the roasting pan (you can use a casserole dish)

Then I pulled apart the leftover turkey and added another layer. Then  covered  in gravy to keep from getting dry.

If you have stuffing add a layer to the top of the pan. If not,no worries. Sometimes we grate cheese and add to the top as well. Place in oven for 30 minutes.  350 degrees

I added a little seasoning salt and scooped into bowls. The kids love it. This also freezes nicely.

  1. This is such a great idea. I usually do the turkey soup or turkey ala king. This is such a great way to get rid of left overs. Could also do it with chicken too 🙂 Thanks so much for the share.
