We went shoppoing in the states last week and the price of chicken was so good I stocked up. I cooked some of for dinner and the next day had lots leftover. So I needed a recipe to use it up. I went to the Kraft site for inspiration. I found the fiesta Stuffed Pasta Shells recipe (it was also in the What’s Cooking mag last month) I changed it up a bit to fit my family.

HEAT oven to 350ºF.
HEAT oil in large skillet on medium-high heat. Add peppers and red onions; cook 4 min. or until crisp-tender. Add chicken, beans and taco seasoning; cook 3 min., stirring frequently. Stir in 1/2 cup cheese. Spoon into pasta shells, adding about 1 heaping Tbsp. to each.
MIX pasta sauce and salsa; spread half onto bottom of 13×9-inch baking dish sprayed with cooking spray. Add shells; top with remaining sauce. Cover.
BAKE 25 min. or until heated through. Top with remaining cheese; bake, uncovered, 5 to 10 min. or until melted. Top with green onions.
This recipe was so quick and easy I thought I messed something up. I had to add a little bit more sauce as my shells were not cooking as they were not covered. It turned out perfect and the entire family loved it.
