Mommy's Weird Genius Cookies – Guest post

I love cook books from the 80’s.  

 
You want to know why?
Mushroom soup and mayonnaise. 
 
It’s in absolutely everything from beef casseroles to veggie side dishes to cookies.
 
Yup, I said cookies.
 
I kid you not.  
 
But, its totally genius. 
 
I am notorious for starting to bake something and then realize I don’t have the ingredients.  
 
Whoopsie.
 
I have great memories from when I was a kid and My Mom would send me next door to Mrs. Horner’s to borrow an egg.  She also had air conditioning and we didn’t, but that’s another story for another time.
 
When was the last time you sent your kid next door to borrow something from a neighbour? 
 
Sadly, I don’t think people even do this any more. I hardly even know my neighbours let alone ask them to borrow a 1/2 cup of milk.
 
That is what makes this recipe so amazing. If you don’t have eggs or butter, you can just use Mayo!  
 
Genius.
 
And these are now forever renamed to …..
 
Mommy’s Weird Genius Cookies
1 cup of white sugar
2 cups flour
1 cup of Mayo
1 tsp baking soda
pinch of salt
1 tsp vanilla

 

Mix sugar, flour, baking soda and salt. Then add the mayo and vanilla and mix the heck out of it.
Shape into little balls and then mash with a fork.
Bake 12 minutes at 350 F

  1. Fun cookies! We had a neighbour kids come over ask to borrow some icing sugar, I brought a full bag, asking how much they needed. They said that's great! took the whole bag and promised they would buy us more….that was in November 😉 LOL I had to make hubby go buy us icing sugar b/c I needed it for my baking haha

    YUCK!!!! Just the smell of mayo makes me ill (NO JOKE). However, being a child of the 70s and 80s I do remember EVERY recipe calling for mayo, including cakes!

    I have a few neighbors that I'm friendly with. There is one in particular that I never hesitate asking to do favors for me and vice versa. A few days ago she borrowed Cream of Tartar from me and today she's picking me up when I leave my car for an oil change. I LOVE having GOOD NEIGHBORS! <3

  3. lol once my neighbour had her hubby come over to borrow lemon juice. we were low and there wasn't much left when he returned it so he went and bought us another bottle. lol why didn't he just go buy his wife a bottle in the first place?
    anyways, I see no chocolate in those cookies. chocolate is a must! lol

    My neighbour once came over to borrow my hand mixer as she was making fudge and hers when dead..well she also burnt out the motor in my mixer. My husband asked her if she was mixing cement and not fudge..lol She replace mine with a much better one.
