Easy Banana Bread Recipe

For some reason bananas always go ripe fast in our house. So I get in the habit of throwing them in the freezer and using them for recipes. They go black in the freezer and don’t always look appealing, but they do the job. Noticing today that we had a few and the temp outside was not too bad for the oven, we made a loaf.  I need to tweak the temperature of our oven a bit for cooking as the outside always cooks faster than the middle. But the kids loved it and it was pretty good.

Banana Bread Recipe
INGREDIENTS

  • 3 or 4 ripe or frozen thawed bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar 
  • 1 egg
  • 1 teaspoon vanilla (optional)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Directions
Preheat the oven to 350°F (175°C). With a big spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add flour last, mix well. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

 

We like to put butter on your slices (I know not good for us but tasty) I wish I can say it lasted, but the kids wiped out the entire loaf. I usually bake a few and freeze for the week. Maybe I will do that while they are at school 🙂
