Leftover Turkey Recipe Roundup

This time of year we all seem to get more than our share of turkey.  Every time I turn around somebody is inviting us over for dinner and turkey is the main course. I love it, but after a while it gets to be too much. My teens could eat it every day if we let them. Maybe I should take that as a compliment? Compared to many meats, turkey is not very expensive, it is actually affordable. We cook up a turkey, feed the 5 of us, sometimes seven. Then the next day have sandwiches and enough leftovers to make soup or what have you.

I have to admit, my creativity with leftovers is not all that great. I can do soup or a casserole but not much more.

So I have reached out to other bloggers and had them share with me what they do with their leftovers.

  1. My favorite thing to do with turkey bones is make a rich stock and then use it for creamy cheesy potato soup.

    I do a lot of Japanese cooking and a few years ago discovered just how delicious curry is when I make it with leftover turkey. It's become our Black Friday dinner.

    My son makes a fabulous turkey soup on Boxing Day, full of flavour and delicious. I also like making a stir fry with left over turkey, I also freeze some of the meat in portions for later meals.
