Banana Muffin Recipe

The smell of banana bread cooking on a cold day is a smell that reminds me of when our older children were just little. Not having much money we would make banana bread for snacks using up ripe bananas. It was so easy to do and so tasty. Now that most of the kids are bigger, bananas do not get a chance to go ripe. If we do get a ripe one I throw it in the freezer and save it until we have enough to make muffins or bread. Usually 3-4 is all that is needed but that often takes a long time to get. we happened to buy some the other day that turned quickly. So today I made banana muffins. They must have been good because half are already gone lol

INGREDIENTS

  • 3 or 4 ripe bananas, mashed
  • 1/3 cup margerine
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • 1 1/2 cups of all-purpose flour

METHOD

Preheat the oven to 350°F (175°C). Mix margarine into the mashed bananas in a large mixing bowl. Mix in sugar and egg. Sprinkle the baking soda over the mixture and mix in. Add the flour then mix well. Pour mixture into greased muffin tray. Bake for 25-30 mins until center is no longer moist. Cool,remove from pan and serve.

  6. I love bananas but sometimes they get too ripe before I can eat them, at least now I know what to do with them

    I love banana bread and banana muffins are all the same to me but I’d probably add nuts and chocolate chips just to make them perfect.
