Devil’s Food Cupcakes

  • 1 lb unsalted butter, at room temperature
  • 4 cups cake or all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 1/2 Tbsp ground cinnamon
  • 2 cups sugar
  • 3 cups packed light brown sugar
  • 2 teaspoons salt
  • 8 large eggs
  • 1/2 Litre buttermilk, at room temperature
  • 400g bittersweet chocolate, roughly chopped

1. Preheat oven to 350 degrees. Prep muffin cups with liners

2. Sift together in large bowl the flour, cocoa powder, baking powder, baking soda, and cinnamon. Set aside.

3. Mix with an electric mixer, butter,  sugars, and the salt on medium speed until the mixture is light and fluffy (about 5 minutes). While the machine is running, add the eggs one at a time, and mix well.

4. Scrape down the sides and bottom of the bowl, turn the speed to low, and add one-quarter of the dry ingredients. When no traces of flour remain, add one-third of the buttermilk and mix until incorporated. Alternately continue adding the flour mixture and the buttermilk , ending with flour. Scrape down the sides and bottom of the bowl and mix in the chopped chocolate.

5. Divide and pour the batter into the muffin cups; each cup should be three-quarters full. Bakefor 30 minutes. Remove the cupcakes from the muffin tin and cool completely on a cooling rack.

Once cool, ice and decorate! 

Whipped Ganache Buttercream

  • 3 lbs semisweet chocolate chips
  • 3 cups heavy cream
  • 1/4 cup light corn syrup
  • 1 teaspoons pure vanilla extract
  • 1/4 lb unsalted butter, softened 

Place the chocolate chips and heavy cream in a bowl set over a pot of simmering water, stirring occasionally, until the chips are completely melted. Remove from heat, and add the corn syrup and vanilla.  Allow the chocolate mixture to cool to room temperature. Whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it’s thickened.

  1. I bet these are amazing, but when I looked at the recipe and saw 1 pound of butter, 8 eggs, etc. I thought this must make quite a few dozen cupcakes. I find the addition of cinnamon very interesting.
