Oven Baked French Toast Casserole with Mixed Berries

I have been pushing my comfort levels in the kitchen lately. I had some french bread that was left open and a bit stale. It was ready to be tossed. However I am trying to waste less. So not having any syrup for traditional French Toast I figured this would be a good time to try a variation of what I see floating around on line. 

First thing I did was break apart the loaf of bread. There was about half a large loaf left. Layered it on a greased with butter, glass casserole dish and set the oven to 300 degrees.

Then in a bowl I mixed up 3 large eggs, 1/2 cup of milk and 1 tsp of cinnamon. Poured over top the bread and folded in to cover each piece. Then I added 1/2 cup of frozen mixed berries. I made to to spread them out evenly through the bread.

Placed it all in the oven uncovered and baked for 25 minutes. My oven is hotter than most so you may need to adjust cooking time. Just as the smell of the cinnamon and berries filled the house, it was ready to remove.

I then scooped out portions for each or us and enjoyed. No syrup needed as the berries sweetened it as it was. This was a huge success! I can not believe how easy it was to make.

Breaking the bread up ensured it was all cooked evenly without soggy pieces. I look forward to making this again and trying it with a variety of berries.
