Bacon is one of those foods my children just love. We usually have it for breakfast though, never dinner. So having a little extra here I decided to change things up. I am glad I did because I have discovered a new fave. Yum! It was kind of like a Cesar salad but in pasta form 🙂 Plus it was nice changing up or pasta routine form the traditional tomato sauce we usually eat. Serves well with garlic bread or a garden salad.
Ingredients
- Bacon (1 pound pack)
- pasta
- Parmesan cheese
- Garlic cloves 2
- Cesar dressing
- Black pepper
Dice bacon by cutting into strips and cutting small squares. Fry in a pan with chopped garlic cloves. Cook until brown. Drain grease.
Cook pasta as per the instructions on package. I prefer rotini but any pasta would work.
Rinse and drain pasta. Add 1/2 cup of Cesar salad dressing. Mix and cover well. Add cooked bacon.
Place on plate. Add cheese and pepper to taste. Serve.
This was good warm or cold. The next day the leftovers made for a great quick lunch too. It was fun having bacon for dinner instead of breakfast.

Sounds delish! Do you know that this is close to the recipe for Spaghetti Carbonara, a staple in my house? Just use more olive oil and garlic, omit the cesar dressing, add lots of parm. and then crack 2 eggs into the hot pasta mixture and mix it all up. the eggs cook in the hot pasta, and you have an awesome dinner. Something to try next time you have leftover bacon!
