Cupcakes with Mint Buttercream Icing

This St Patrick’s Day whip up this special treat for your family. Yummy Cupcakes with Mint Buttercream Icing featured below would be great for a special treat or party. They look as good as they taste and would be a big hit for all!

Ingredients:
1.5 cups butter
2 tbsp vanilla
3 cups icing sugar (powdered sugar)
1 tbsp peppermint extract
6-9 drops of green food colouring (to desired colour)
 
Whipped Cream
 
Directions:
In a stand mixer with the paddle attachment cream butter until creamy.
Add vanilla and mix till combined.
Add icing sugar cup by cup until combined.
Add peppermint extract and food colouring.
Mix until colour is even and frosting is light and creamy.

Instructions:
  • Bake your favourite chocolate cupcakes. 
  • Using a cupcake corer take out the middle and discard (or eat!)
  • Fill with whipped cream
  • Top with Mint ButterCream Icing

  7. Those look a lot like the cupcakes our son in law brought to our Family Cook Off last weekend. They look so good. I didn't eat any because I don't do any cane sugar, but your cupcakes look so good, I could almost cheat.

    These are so easy to make, and nothing beats a good buttercream icing. BTW…I just discovered something today. I can make little cupcakes by using the paper medicine cups (or portion cups restaurants use) as liners. Who would of thought?
