Steam Buns Recipe with Pork

Pork Steam Buns

For pork belly

  • 1 lb skinless boneless pork belly, cut into quarters
  • 2 cups apple cider
  • 2 bottle pale ale
  • 2 tbspn course salt

For buns 

  • 1 ½ cups warm water
  • 1 tbspn plus 1 tsp active dry yeast
  • 6 tablespoons sugar
  • 1 tbspn salt
  • 3 tablespoons nonfat dried milk
  • 4 ½ cups bread flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1/3 cup rendered pork fat

Quick Pickled Cucumbers

  • 2 cucumbers
  • 1 cup salt
  • 1 cup sugar

Quick Kimchee 

  • 2 heads napa cabbage
  • 1/2 cup sea salt
  • 5 cups water
  • 4 garlic cloves
  • 1″ piece ginger
  • 1 small onion diced
  • 3  tablespoon anchovy paste
  • 2 teaspoon sugar
  • 3 tablespoon Korean chili flakes
  • 2 tbspn honey
  • 2 red chilies seeded and thinly sliced, optional
  • 2 tablespoon toasted sesame seeds

Directions

Cut off the stem part of cabbage. Cut each cabbage leaf in half or 3­4 section (depends on the size) vertically. Place the cabbage leaves in a large mixing bowl.

Combine salt and water and bring to a full boil dissolving the salt. Cool down for 5 minutes and pour over cabbages in mixing bowl. Let it sit for 10 minutes, turn the cabbages over to the other side and continue to soak for 5 more minutes. Rinse once and drain thoroughly.
To make Kimchi filling, combine garlic, ginger, onion and anchovy sauce in a blender and puree until smooth. Pour the puree in a small mixing bowl. Add Korean chili flakes, sugar, and honey. Mix well.

Place drained cabbages in a large shallow mixing bowl. Add the red chilies if using, and the Kimchi filling. Toss all together to coat evenly. Sprinkle toasted sesame seeds and toss well. Adjust seasoning as you wish.

This Kimchi will stay fresh in the fridge for 10 days. 

Steam Buns how to 

Put the water and yeast into a bowl and wait for the yeast to dissolve

Put into mixer add sugar, salt, dried milk, bread flour, powder, baking soda

Then add the pork fat, any fat will do. Bacon fat or duck fat.

After your dough is made divide into little balls then let sit for 20 -30 mins. They will double in size.

Then roll out the balls and add oil on one half then fold. The oil will stop the bun from sticking to the other side. After that place on steamer for 7 minutes.

Fill and serve!
