Strawberry Loaf Recipe with Splenda #SweetSwaps

I originally made strawberry muffins and we loved them. But knowing how quickly the kids ate them up I wanted to swap the recipe with splenda. This time I also made it into a loaf.

Strawberry Loaf

Ingredients

  • 1/4 cup oil
  • 1/2 cup 1 % low fat milk
  • 1 egg
  • 1/2 teaspoon salt
  • 2 tsp baking powder
  • 1/4 cup SPLENDA
  • 1 3/4 cups all purpose flour
  • 1 cup of strawberries sliced

Directions

  1. Preheat oven to 375 degrees F (190 degrees C) Prepare loaf pan, with cooking spray.
  2. In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and SPLENDA. Add in sliced strawberries and coat with flour. Pour in milk mixture and stir together.
  3. Fill pan to half. Bake at 375 degrees F (190 degrees C) for 25 minutes.
  4. Cool for 25 minutes or more to ensure fruit does not cause muffins to separate. 
  5. Slice and eat or freeze for later.
