As you know from my recent Strawberry Smoothie recipe post, I had some extra strawberries here. I really thought the kids would have wiped them out quickly, but they did not. So it was a good time for me to try out a few different recipes. Can you believe I never baked with strawberries before? I know, shocking! I decided Strawberry muffins would be an easy option. I had a few trial and errors though. Turns out you need for the muffins to be completely cool before removing from the pan. Or where the berry is, will fall apart completely.
Strawberry Muffins
Ingredients
- 1/4 cup oil
- 1/2 cup milk
- 1 egg
- 1/2 teaspoon salt
- 2 tsp baking powder
- 1/2 cup sugar
- 1 3/4 cups all purpose flour
- 1 cup of strawberries sliced
What you need to do
Directions
- Preheat oven to 375 degrees F (190 degrees C) Prepare an 8 cup muffin tin, with butter or liners.
- In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Add in sliced strawberries and coat with flour. Pour in milk mixture and stir together.
- Fill muffin cups to half. Bake at 375 degrees F (190 degrees C) for 25 minutes.
- Cool for 25 minutes or more to ensure fruit does not cause muffins to separate.
- Eat or freeze for later.
Now the kids did not wipe out the strawberries. However I made 3 batches of these and they did not last the night. Teen boys seem to like fruit in the form of muffins 🙂
