With the nicer weather upon us, BBQing is going to be more and more frequent. We enjoy grilling all summer long and look forward to entertaining guests in our yard. To mix things up I like to offer a variety of salads for our guests to choose from. Same when we are invited to a BBQ. I usually opt in to bringing a salad. Something a bit different from the usual. Something light, fresh and full of flavour. This Dill Cucumber Salad with honey and sour cream salad that my oldest recently made is perfect to have on its own or as a side. Made with summer fresh cucumbers it will be a great addition to any backyard Barbecue.
Dill Cucumber Salad with Honey and Sour Cream
- 1 English cucumber, peeled seeded and diced
- Kosher salt
- 75ml. Sour cream
- 50ml. Mayonnaise
- 1 Tbsp. honey
- 1 Tbsp. Fresh chopped dill
- (+ Reserve some sprigs for garnish)
Add sour cream, honey, mayo , salt and pepper, to bowl and stir. Add dill make sure to pull it apart from the stem. Cut cucumber into thin, even slices. Add to dressing. Mix up and set in fridge for 20 minutes to soften up and cool. Serve.
This fresh salad is sure to have your guests happy! Keep cool as it contains mayo.
As a little girl I remember picking cucumbers and fresh dill from my grandparents garden. This salad brings back those happy childhood memories 🙂
