I am a salsa lover! I love trying different salsas on almost anything. So when my oldest made Empanadas with Grilled Pineapple Salsa at school last week she knew I would be a fan.
Of course I just had to share with you all
To make the pastry (6) you need
- 100 gr. All Purpose Flour
- 60 gr. Masa Harina
- 2 tsp. Baking Powder
- ½ tsp. salt
- 60 gr. Lard, melted room temp.
- approx. 70 ml. Water
- ½ egg
The filling
- 10 ml. veg oil
- 100 gr. ground meat
- 50gr. onion, minced
- 2 cl. garlic, minced
- a pinch of cumin
- 50 ml. chicken stock
- 2 green onions, chopped fine
- 60 gr. Monterey jack cheese, grated
instructions
In a Medium pan with oil (med. to high heat)
Sauté onions, garlic, chicken, and season.
Cook until no longer pink.
Add stock and reduce.
Then add green onions and turn off heat and melt the cheese.
Refrigerate until needed.
Serve with pineapple salsa
Pineapple Salsa
- 150 gr. pineapple, grilled, cooled & grated
- ¼ red pepper, diced
- 1 Tbsp. red onion, minced
- ½ minced jalapeno
- 2 sprigs cilantro, coarse chop
- ½ tsp. dried Mexican oregano, rubbed
- 1 tsp. ginger, minced
- Simple syrup and lime juice to moisten / salt and black pepper
Step by step
Sift flour, masa harina , baking powder and salt into a bowl.
Add Lard, half of the water and half of the egg.
Knead dough in the bowl.
Add water if it starts to crumble.
Shape into a log and let rest for 30 minutes.
Divide dough into 6 pieces.
Put parchment square underneath and on top. *Tray with parchment and 8 to 10 parchment squares
Roll out into a circle.
Add filling and egg wash along the edges. Fold in half.
Cut into a moon shape
Pinch ends to close.
Brush egg wash over. Bake for 15- 18minutes.
Masa harina is a type of traditional flour used in Mexican cooking
Preparation for salsa
Season the pineapple with salt and pepper.
Add oil then place on grill.
In bowl add red pepper, jalapeno, cilantro, oregano, and ginger.
Grate pineapple into bowl with the juice.
Add lime juice, with some simple syrup.
Season and refrigerate.
Enjoy!

These look so good. My son loves Empanadas. We always buy them from a little Columbian store near us. I have been too scared to try them but seeing your pictures I realize I really should try!
