Peppercorn Steak with Asparagus

I am pretty sure my oldest son is a steak fantatic! Everywhere we go he orders a steak and compares it to the others he has had. He truly enjoys every last bite of this well done piece of meat. Me on the other hand enjoy my steak a bit on the pink side. I love it, but not as much as he does. Recently my oldest daughter who is going to school for cooking made a peppercorn steak that even my son had to admit was awesome! Take a look for yourself and let me know what you think.

Peppercorn Steak 

1 x 6 oz. top sirloin steak

½ tsp. each Black, White peppercorns

Sea salt

Vegetable oil


• Crush the black and white peppercorns with frying pan. Put on to a plate with sea salt.

• Press the meat into the seasoning on both sides.

• Put vegetable oil in a medium sauté pan.

• Wait for the sizzle. Coat each side 3- 4 minutes.

The peppercorn sauce

½ shallot, minced

1 tsp. black peppercorns

1 tsp.. Madagascar green peppercorns

1 tsp.. Pink peppercorns

10 ml. brandy

60 ml demi glace

40 ml 35 % cream

• Using the same pan add shallots, all the peppercorns, brandy, demi, and cream.

• Reduce.

• You want to the sauce coat the spoon when you trace it.

Green and White Asparagus:

3 pcs. Each green and white asparagus


• Break in half and using paring knife to point the ends.

• Boil for 45 seconds to a 1 ½ minutes than into ice bath for a minute.

• Take out and wrap until ready to cook.

• add Butter to sauté pan on low heat and add the asparagus.

• Sauté for a few minutes.


Place it on a place with salad or potatoes and enjoy! This is a great family dinner or date night in meal
