Gluten Free Spiced Pumpkin Muffins

(Makes 12 muffins)

Ingredients:

2 cups gluten free flour blend

2/3 cup firmly packed brown sugar

1/3 cup sugar

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1⁄4 teaspoon baking soda

1⁄4 teaspoon ground ginger

1⁄2 butter, melted

1⁄2 cup mashed cooked pumpkin

1/3 buttermilk

2 eggs, slightly beaten

Directions:

1. Heat oven to 400°F. Place paper baking cups into 12-cup muffin pan cup or grease cups. Set aside.

2. Combine all ingredients except butter, pumpkin, buttermilk and eggs in bowl.

3. Combine all remaining ingredients in another bowl. Stir into flour blend mixture just until moistened.

4. Spoon batter into prepared muffin pan. Bake for 15-20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan.

School is back and Fall is here! I have a couple pumpkins growing in my garden and I am excited to try out some new recipes with them. This yummy Gluten Free Spiced Pumpkin Muffins recipe is sure to be a great one. Great for lunches or after school snacks! Youc an use pumpkin from a can or from the garden, whichever fits you best. 

This seasonal treat is also great for family get-togethers and picnics. 

How to cook a pumpkin

Directions

Preheat oven to 300 degrees F (150 degrees C).

Cut pumpkin into small manageable pieces and cut off soft spongy pith and seeds.

Place cut pumpkin skin side up in a large roasting pan. Add 1/4 inch of water and bake uncovered for 1 hour or until tender

Remove from oven and cool

When cooled, cut away skin and mash or puree.

    I've cooked with pumpkin a few times. I know that it's a good way to add fiber, but I really love it for the taste! The flavor is amazing. Sometimes I even stir some pumpkin into a soup or stew; it goes well with beef and pork.
