Gluten Free Peanut Butter Banana Oatmeal Bars recipe

I have to be honest, I see ‘Gluten free’ and often do not click to try the recipe. I think my brain is wired to think it will taste differently or something. However this is not true, gluten free recipes are really good! This Gluten Free Peanut Butter Banana Oatmeal Bars recipe is a yummy one when on the go. Great for picnics, road trips and after school snacks. Of course you can not send to the schools though as many are nut free zones these days. So be careful not to put anyone at risk. 

Gluten-Free-Banana-Oatmeal-Bars

Gluten Free Peanut Butter Banana Oatmeal Bars

makes 12-16 bars

Time: 25 minutes

Ingredients

  • 2 1⁄2 cups old-fashioned rolls oats (not instant or quick oats)
  • 1⁄4 cup brown sugar (can use light or dark brown sugar)
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1⁄2 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 large ripe bananas, mashed (the more ripe the better)
  • 1/3 cup creamy peanut butter
  • 1⁄2 cup semi-sweet chocolate chips
  • 1⁄2 cup peanut butter chips

Directions:

1. Preheat oven to 350F degrees. Spray 8” x 8” square (or 9” x 9”) baking pan with cooking spray or line with parchment paper. Set aside.

2. Mix together oats, brown sugar, baking powder, salt, and cinnamon. Add in the milk, vanilla, and egg. Mix together until evenly combined. Add mashed bananas, peanut butter, chocolate chips, and peanut butter chips. Stir well.

3. Pour the mixture into the pan and bake for 20 minutes. Allow to cool and cut into bars.

This can be the new twist on peanut butter and banana sandwiches (my fave) Enjoy!

  1. The reason I hesitate to look at GF recipes is because of all the ingredients that I do not have and do not want to stock. If I leave out the sugar and PB chips, I have everything I need for your recipe. I will add some apple sauce and, if needed, some stevia.

    These look really really good. I often don't look at gluten free things either usually because of the ingredients that I also do not have lying around my house.. I guess some people have to look for gluten free versions, but we are a gluten consuming family. 🙂
