Kale Salad with Sweet Potato

We are smack dab in the middle of winter!

This means less sunny days, more cloud and more gloom. Yes winter has its great benefits and all, but over all many of us hibernate until the first true signs of spring. It feels like our winters are lasting longer and are colder than before. Snow so deep it is impossible to carry on with our daily routines. I personally find I am watching more television, getting out less and of course my eating has changed.

In the winter months we eat more foods from the pantry. Foods that are not fresh as the garden is not available. I think this is a reason many of us get sicker in the winter months. Less vitamins from the sun and less from the lack of fruits and vegetables. I am making more of an effort to eat fruits and vegetables now and create some tasty recipes the family will love.

This salad is a fresh healthy way to feel Spring is on its way!

Kale Salad with Sweet Potato

Ingredients
Salad:
3 cups Kale, rib removed, chiffonade soaked and dried

3 cups Mixed greens

1 cup of cooked and diced Sweet Potato

1/2 cup of dried cranberries

1 cup red grapes, sliced in half

1/2 cup of chopped Pecans

1/2 cup of Feta Cheese crumbled

1/3 cup of Quinoa

pinch sea salt

pinch pepper

Dressing
2 oz rice white vinegar

8 oz fresh squeezed orange juice

2 oz lemon juice

1 tsp dijon mustard

2 tsp honey

1 tsp salt

pinch black pepper

2½ cups extra virgin olive oil

Directions

Salad:
In a mixing bowl combine kale, dried Cranberries , grapes, Quinoa, Sweet Potato and a ⅓ cup of the citrus vinaigrette; toss together by hand. Season with salt and pepper and toss again. Add more dressing if needed.
Next pile salad on a plate and top with feta and Pecans, serve.
Dressing: Combine all ingredients except oil in a blender and mix till smooth. Slowly drizzle in oil in a steady stream till well incorporated.

Tips and tricks 

To rinse/soak Kale: Place kale stalks in a large bowl and fill with water. Leave in bowl for 10 minutes swishing stalks around every few minutes. Rinse well. Set on towels and pat dry. When leaves are dry cut out ribs and discard stalks, chiffonade remaining leaves.

Citrus Vinaigrette: recipe makes a lot of dressing, feel free to cut the recipe in half and save extra in the refrigerator.

This salad is great as a lunch or a side with dinner. The colour makes it very pretty but the vitamins and nutrients are surely going to help bring you out of the winter gloom.

  3. I've never thought to add sweet potatoes to any type of salad mix. I bet this is really good. I've never had Kale but I am a BIG fan of sweet potatoes.

    Kale is so good for you! I remember when it was just a garnish on my plate in the 80's and 90's. I do a lot of Kale salads, I like the texture that it gives the salad.
