Chocolate Avocado Cupcakes with Avocado Buttercream Frosting

This new to me combination seems to be popping up everywhere lately! Chocolate avocado pudding, cupcakes and even smoothies seem to becoming more and more popular. The combination is extremely moist and so good! This surprisingly tasty contamination will have you wanting more. Festive for St Patrick’s day but great to enjoy any time of year. Chocolate-Avocado-Cupcakes-with-Avocado-Buttercream-Frosting

Cupcakes

Ingredients:

Boxed chocolate cake mix and the ingredients it calls for minus oil

1/3 C. Ripe avocado, mashed (to replace the 1/3 C. oil)

Directions:

Follow directions on box, omitting oil and replacing equal amount of mashed avocado. Reduce baking time by 5 minutes. Cupcakes are done when a toothpick inserted in center comes out clean.

Frosting

Ingredients:

  • 5 Cups powdered sugar
  • 1 Stick of butter, softened
  • 1 Ripe avocado, mashed
  • 3 tbs milk

Using a stand or electric mixer, combine butter and avocado until combined and smooth. Slowly add powdered sugar. Adding milk to the consistency you desire.

Leaving out the oil this is a healthier option. Avocado is really good for you and helps get those greens into your family’s diet without the complaints. I have picky eaters and they love these cupcakes!

    what an amazing combination, never heard of that before. I do like the shamrock iced on one of the cupcakes, a great idea for St Patrick's day tomorrow 🙂

  4. AMAZING!! I am totally bookmarking this. before i would have been kind of grossed out with avocado being used but I have been experimenting with it and I am actually a big fan. my daughter and I put it on our toast with peanut butter 🙂

    I LOVE avocado and have recently started to include it in my baking and cooking. I am definitely going to try subbing in avocado for oil.
