Ambrosia Fruit Salad Recipe

Also known as Pineapple & Mandarin Orange Fluff, Ambrosia fruit salad has been a family fave for years. Every family meal or holiday where extended family would visit, my aunt would make this creamy salad. Our family is huge so everyone is to bring something, potluck style. It works well this way and gives us all a variety of foods we may not normally try. I always loved that Ambrosia looked like a dessert but was considered a salad, so I did not have to wait until after dinner to enjoy it. Oh the mind of a child! Why I waited so long to make it for my own family I will never know. Maybe it is my youngest’s obsession with mini marshmallows that triggered the memory and me wanting to make it.

For Easter we had the big traditional dinner with all the fixings. Ham, turkey, potatoes, corn, rolls and gravy. There were lots of extras like stuffing and cranberries too as well as desserts. With so many people being over for dinner I figured this was the perfect time to make Ambrosia Fruit salad. Someone surely would share my love for this recipe and I will have reason to make it again.

I made it the night before as I knew I would have limited time the day of dinner. Hosting meant limited space int he kitchen as well as non-stop meal prep. Anything I could make ahead made my life easier. If you make this ahead I recommend the night before or same day as it doe snot last long in the fridge. I found the day after dinner it started to go watery and needed to me finished quick. So 48 hours in the fridge is all it has.

No matter what though be sure to make this at least an hour before you serve and chill. I find it fluffs up and makes it a tad more creamy that way.

Ambrosia Fruit Salad

Ambrosia Fruit Salad AKA Pineapple & Mandarin Orange Fluff

Ingredients

1 can of drained Pineapple chunks 50 oz

2 cans of mandarin oranges drained 30 oz

1 medium tub of sour cream 16 ounce

1 cup of cool whip (optional)

4 cups pf mini marshmallows and colour

1 cup of shredded coconut sweetened

Add all of the ingredients in a large bowl mixing well. Refrigerate for an hour min then serve. Discard anything left after 48 hours as the cream starts to separate. Coloured marshmallows make for a pleasant looking salad but any work.

Note- You can substitute the pineapple for a can of fruit salad drained if you would like to change it up a bit

    This reminds me of a family fave my Grandma used to make with apricot jello and pineapple. Sounds yummy.

    This is a popular salad in my husband's family and I love it. I do not make it as much myself but it is from making other desserts and not from finding it delicious. I don't think we put sour cream in ours. It is a light and very delicious dessert.
