When you cook as much chicken as I do, there are always leftovers. Now the question is, what do you do with them? We had a few dark and gloomy days last week so I thought soup would be good. But not just any chicken noodle. I wanted something with a bite. So I mixed up a batch of Fiesta Chicken and it was so good.
Fiesta chicken soup
What you need
- Leftover chicken ( 2 breasts or three cups chopped)
- 1 large can of tomatoes 500 ml
- 1 can or corn 250 ml
- Garlic powder 1 TBSP
- chili powder 2 tsp
- half an onion diced
- 2 cups of noodles
- 1 can of washed black beans 250 ml can
- chicken gravy or stock 2 cups
- 2 Bay leaves
- water 2 cups (add more as needed)
- Shredded cheese
- corn chips
Dice up leftover chicken and remove any bone. Add to pot and add water, chicken stock/gravy, garlic, onions, chili powder and tomatoes. Bring to a boil, simmer covered. Add more water if needed.
Add noodles of choice, corn, beans, and cook on low for 10 minutes or until pasta is done.
Pour into bowls and top with tortilla chips and grated cheese.
Add ons- You can add hot sauce or sour cream or guacamole as garnish if you like.
Note- My leftover chicken was oven roasted the night before and cajun seasoned so I did not need to add to much additional spice.
For a creamier soup, add one cup of milk and 2 TBSPs of flour to thicken
My picky eaters saw the tomatoes and were not pleased with me. But I told them to have a taste and they loved it. They finished off the entire pot in one sitting. I was happy to use up my leftovers and they were happy to have something different they actually enjoyed 🙂
