Mint Chocolate Plant Parfaits recipe

Spring has sprung and with that we see new life and new growth. I was out trimming the hedges and raking out leaves from the flowers beds over the weekend. I took a moment and looked around me while enjoying the warm breeze. I noticed all of our trees had little buds spouting out from them in green, red and yellow. It is truly amazing to see everything growing after the long cold winter we had.

It is still a bit early for planting but there is plenty of time for prepping. I am thinking of doing my garden in planters this year to add to the decor of my deck. Still early, so we will see. We have also been looking at flowers to plant in the beds (my daughter and I). While we wait for the temperatures to remain above freezing long enough to plant outside and still enjoy spring we decided to bring the fun indoors. These Mint Chocolate Plants are a tasty treat that just scream Spring!

Mint chocolate parfait plants

Mint Chocolate Plant Parfaits

Yields: 4 parfaits

Ready in 20 minutes

Ingredients:

  • 2 – 3.9 oz. boxes chocolate pudding mix and required ingredients
  • 1 package chocolate sandwich cookies
  • Fresh mint leaves

Additional Materials:

4 Half-pint mason jars

Directions:

1. Prepare chocolate pudding as directed on package

2. Place chocolate cookies in a large resealable bag and use a rolling pin to crush

3. Pour a heaping tablespoon of crushed cookies into each jar.

4. Add a generous quarter-cup of chocolate pudding to each jar (enough to fill about halfway).

5. Repeat steps 3 and 4, and top with a final layer of crumbled cookies to create the appearance of dirt.

6. Poke a few sprigs of fresh mint leaves into the top of each parfait, creating a little “seedling.”

These adorable edible plants are great for rainy days or fun to make at a Spring themed birthday party! Give it a try and tell me what your little ones thought 🙂
