Some foods just scream summer! Corn is surely one of them.
It is great on its own and even better when served in a recipe like a salad. I love grilled corn on the cob smothered in butter and a sprinkle of salt. Salads that contain corn are fabulous for barbecues and family gatherings. They are inexpensive and a real crowd pleaser. It is not hard to find fresh corn on the cob this time of year either. Any farmers market, local grocer or farm stand will have it ready for you to take home.
Below are a few that will surely keep you and your friends loving corn all summer long. So stock up and try them all! If summer is over and corn is not available on the cob, you can always buy the kernels as well for these recipes.
Grilled Corn with Lime-Cayenne Butter
Grilled Corn on the Cob with Roasted Red Pepper Butter
Slow Cooker Mexican Street Corn
Roasted Corn, Black Bean, and Mango Salsa
Corn Salsa with Fire Roasted Tomato Appetizer
