Summer is here and that means BBQ season and entertaining! So why not change up what you bring and let your friends enjoy these yummy Margarita bites! A whole new meaning to bring your own booze BYOB! For me, JELLO and Margaritas scream summer, so this recipe is perfect!
Margarita Bites
Ingredients
- 2 Pkg. Lime Gelatin
- 2 Cups Boiling Water
- 1 Cup Cold water
- 2 Limes
- 2 Cups Whipped Topping
- ½ Cup Tequila
Instructions
In a small sauce pan bring 1 cup water to a boil with the zest of one lime.
In a small bowl combine the boiling water with 1 pkg. of Lime gelatin, stir until dissolved.
Stir in ¾ cup cold water and the juice of one lime. Let the mixture cool for 5 minutes. Stir in the
Whipped topping. Pour the mixture into a lightly sprayed 8×8 inch pan. Refrigerate until set, at least an hour.
In a small sauce pan bring 1 cup water to a boil.
In a small bowl combine the boiling water with 1 pkg. of Lime gelatin, stir until dissolved.
Stir in ¼ cup cold water, the juice of one lime and ½ cup cold Tequila (I put mine in the freezer).
Remove the set gelatin from the fridge and lightly score across the top with a knife about ½ inch apart and 1/8 inch deep.
Pour the liquid gelatin over the set gelatin.
Refrigerate until set.
Remove from fridge and cut into squares, cut slowly to avoid tearing.
Invert onto a serving platter or cutting board. Serve on a plate or place into muffin liners for easy serving.
Refrigerate when not serving.
Note-This recipe contains alcohol and will have the full effect of it as it is not cooked/boiled off. Not for anyone that is not of drinking age.
