Summer Lemon Blueberry Bread

When I think of summer, blueberries always come to mind. I just can not get enough of them. I put them in everything I can think of. Smoothies, pancakes, muffins and on their own. They are so good to eat and so good for you! Hopefully you can grab a bunch at a local farmers market or fruit stand and enjoy them for yourself. Summer Lemon Blueberry Bread

Ingredients:
1/2 cup softened butter
1 cup white sugar
2 eggs
1 1/2 cups of flour
1 tsp. baking powder
1/2 cup milk
1/2 tsp. salt
1 cup fresh squeezed lemon juice
1 cup blueberries

Instructions:
Preheat the oven to 350 degrees.
Beat the butter in a bowl with a mixer until it is creamy and add sugar and continue mixing.
Add in the eggs, one at a time. Stir in the flour, baking powder, milk, salt, and lemon juice.
Fold in the blueberries.
Pour into a small bread loaf pan that has been greased and floured.
Place on the middle rack in the oven for about an hour, or until your toothpick comes out clean.
When the bread is done baking, remove from the oven and sprinkle sugar to the top.

Alternatively, you can use any boxed lemon cake mix and add a tsp. of lemon juice to spruce up the flavor! Don’t forget to fold in your blueberries and finish baking as directed–with sprinkled sugar on top for a sweet finishing touch.

This would be nice served with tea or your favourite summer beverage. Enjoy!

  9. I have made this 2 nights in a row & both times it ended up sinking after taking out of oven to an inch thick & mushy. The first time I thought it was because my baking powder was expired, made it tonight with new baking powder & turned out the same flop. Looking at Recipe there is too much liquid. Not sure which is too much but this recipe doesnt work.
