As a young girl I would watch my mom and grandma spend almost an entire day prepping a meal to feed the family. This was the norm and happened often. I grew up loving many of the foods and wishing I too could cook like them. But life is busy and I am a bit of a lazy cook LOL Just being honest. I get frustrated when the family eats meals faster than I could prepare them. Plus I snack while I cook. So if it takes me all day to cook, I am not hungry at dinner time.
One of my fave meals has always been cabbage rolls, yet I have never cooked it. It is time consuming and my family is picky. I have however made variations of this recipe by making “Lazy cabbage rolls ” or “Poor mans cabbage rolls” which are a messy layered version in a casserole dish. I have even made Cabbage Roll soup and was surprised that my family loved it.
I think the soft, slow cooked veggies made it easier for my picky eaters to enjoy. They did not see the cabbage as a big green wrap like they would had it been in roll form. Plus the onions and other veggies are cooked to a point they are almost invisible. This recipe I am happy to say has become a family fave!
Crock Pot Cabbage Roll Soup
Serves: 8
Prep Time: 30 Minutes | Cook Time: 8 Hours
Ingredients:
4 cups cabbage, roughly chopped
1 lb. ground beef
1 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. paprika
1 onion, chopped
3 cloves garlic, minced
½ cup water
1 tsp. oregano
½ tsp. basil
24 oz. tomato sauce
2 14.5 oz. cans diced tomatoes
1 cup rice, uncooked
Directions:
1. Add onion, garlic, Worcestershire sauce, paprika, ground beef and salt to a skillet on medium heat. Cook until the ground beef is browned.
2. In a slow cooker, add cabbage, oregano, basil, tomato sauce, diced tomatoes, water and ground beef mixture and stir to combine.
3. Cover and cook on low heat for 8 to 10 hours.
4. In last half hour of cooking, cook the rice according to package directions. Add the cooked rice to the slow cooker and stir to combine.
This recipe is comfort food at its finest! Perfect for busy Fall nights and full of yummy goodness! Give it a try and see for yourself 🙂

One thing I noticed quickly is how polarizing just the word cabbage can be. I chalk it up to picky eaters, afraid to try something unfamiliar.
I have never tried this but am going to.It looks delicious and I love cabbage in anything especially in the fall.Homemade soup is a comfort food for me when it gets cooler out.Thank you for the recipe.
