Traditional Macaroni Salad

There are certain recipes I think of that remind me of my childhood. Recipes that can be changed up slightly but still hold that special place in our minds and our hearts. The traditional Macaroni salad is one of those recipes. As a child we would visit family for a weekend lunch and there would always be a variation of this recipe there. Potlucks, barbecues and family reunions always had macaroni salad on the menu. It is quick and easy and can feed a crowd for very little.

If you are looking for a crowd pleasing recipe next time you attend a group dinner, you should try this Macaroni Salad.

Traditional Macaroni Salad

Ingredients

  • 16 oz, Elbow Macaroni, cooked, drained and rinsed
  • 1 green pepper
  • 10 small carrots, or 1 large
  • ½ medium onion
  • ½ c. diced celery
Dressing:
  • 1 c. mayonnaise
  • ½ c white vinegar
  • ⅓ c. sugar
  • ½ c sweetened condensed milk

Instructions
Mix first 5 ingredients together in a large mixing bowl. In a second bowl mic the ingredients for the dressing. Pour dressing over macaroni mix, folding in to cover evenly. Cover with plastic wrap and cool.
Chill for 2 hours or more in refrigerator. Make sure to mix before serving to keep moist.
Makes about 10 cups of pasta salad. If needed add an extra tablespoon or mayo before eating to make extra creamy.

I find the smaller I dice the veggies the more likely my picky kids will eat them. This is one of my favourite recipes! Enjoy!
