Fudge Cookies with White Chocolate recipe

My weakness is chocolate! Chewy chocolate fudge is my favourite sweet treat and I just can not resist it. The cooler months for me are all about indulging in comfort food sand enjoying some cooking while having family fun. These Fudge cookies with white chocolate are perfect for this!

Fudge Cookies with White Chocolate

What you will need

  • ½ cup butter

  • 1 cup granulated sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1 cup fat free buttermilk

  • 2 cups all purpose flour

  • ¾ cup dark dutch process cocoa

  • 1½ teaspoons baking powder

  • 1 teaspoon instant coffee granules (or espresso powder)

  • ½ teaspoon salt

  • 8 tablespoons vegetable shortening

  • ½ cup white  chocolate chips

INSTRUCTIONS

  1. Pre-heat the oven to 350 and line a baking sheet with parchment paper.

  2. In a large bowl beat together the butter and sugar until smooth. Add the egg and vanilla and beat for about a minute. Slowly pour in the buttermilk and mix.

  3. In a smaller bowl whisk together the flour, cocoa, baking powder, instant coffee granules, and salt. Add the dry mixture to the wet and mix until just combined.

  4. Scoop the dough out using a tablespoon and place about 2 inches apart on the prepared cookie sheet.

  5. Bake for 8-9 minutes.

  6. Let the cookies cool for a few minutes before removing to a wire rack to cool completely.

  7. While the cookies cool melt the shortening over medium heat in a small saucepan. Whisk in the white chocolate chips. Keep stirring until the mixture is soupy and smooth and then remove from the heat.

  8. Drizzle white chocolate over the cookies.
