Add More Green to your Plate with Local Asparagus from Loblaws #WeLoveFood #ShareTheFoodLove

Growing up we had a lot of veggies on our plates. Often they were boring, but they were there. Through the years I have tried my family on different vegetables but many were not something they enjoyed. Now that they are older, I am trying again. I am adding more fresh local produce to our meals and I am changing things up. Since my family is super picky, I am not going too crazy but I am adding more colour and flavour to our meals.

This month I am adding asparagus to our plates. This tasty firm vegetable that harvests in the spring throughout Canada, is a fabulous addition to any meal. You can steam them or add them to a salad or other recipe. The longer they cook, the softer they become.

I have been adding them secretly to soups and stews for quite some time. Asparagus is very easy to cook and it is full of nutrients. There are many asparagus recipes to choose from.

I figured since the kids are older I no longer had to disguise them when I serve them. Plus they are super fresh and taste so yummy right now.

I served up pork chops and made Sauteed Asparagus to cover them.

Sauteed Asparagus

  1. Heat oil in a large skillet over high heat. When oil shimmers, add asparagus, salt, and pepper
  2. Stir in lemon zest and minced garlic cloves cook 1 minute more.
  3. Add lemon juice to skillet and stir a few times. Remove from heat, and serve. For additional flavour, shave Parmesan over top.

This was also yummy to mix in with rice and add onto a salad. My kids even tried them, so that made me happy!

    I have never made asparagus because my husband doesn’t like it. He tried it once at a restaurant and kind of liked they way they made it. I would love to find a great recipe and surprise him!

  4. I usually steam asparagus and serve it with a dip. I will have to try it stir fried just like what you did. Looks like it will be a yummy veggie dish!

  7. I adore asparagus but it so easy to screw up. You really have to pay attention that you are cooking it right. Tastes amazing with pasta.

    We love asparagus but usually just steam it with butter..your recipe is quite unique

  11. I’ve never acquired a taste for asparagus. However, I do use a variety of greens in my salads and smoothies, such as baby spinach leaves, kale, and green leaf lettuce. I also add avocado to my smoothies.
