This time of year always seems to go hand in hand with apples. We love going apple picking and often collect way more apples than we can possibly eat. I freeze quite a bit for recipes, make apple sauce, add them to smoothies and of course we eat them on their own. Apples are a great food you can eat anywhere anytime. They are full of vitamins and help you get through the day. I love that they are one of the only colourful foods I can get my kids to eat. So we always have them in the house.
If you are like me and have a few extra apples around, you will want to try this recipe. It is yummy and the kids will love them. These are great for snacking on the go and school lunches.
Apple Oatmeal Muffins
Yields: 12 muffins
Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes
Ingredients:
2 cups buttermilk
1 cup old-fashioned rolled oats
2 large eggs
1/3 cup packed brown sugar
1 unpeeled medium apple, grated
1 2/3 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
¾ teaspoon salt
Optional flavor additions: 1 cup fresh berries; 2/3 cup dried fruit, ½ cup chopped nuts
Directions:
- In a large bowl, combine buttermilk, oats, eggs, sugar and optional flavor additions.
- Combine flour, baking soda, baking powder and salt. Sift.
- Preheat oven to 375 degrees F. Grease a 12-muffin tin or use muffin liners. Fold dry sifted ingredients gently into wet ingredients until just combined.
- Fill muffin tins and bake 25-30 minutes or until golden brown. Loosen from pan immediately and allow to cool on a cooling rack.
Notes: These may be frozen and defrosted individually later for snacks.
Serve these with jam or butter or eat on their own. These yummy muffins are great for everyone anytime! I can not wait to make another batch.

I think this is a wonderfully healthy and delicious recipe. There is no fat and very little sugar. There is lots of fiber with oatmeal and the shredded apple. Thank you so much for this recipe.
