Delicious Lamb Lollipops on the Barbecue

In my home we barbecue all year long! So summer may be over but BBQ season is still here! My family loves when we grill dinner and they always keep me company when I am out cooking. Well, as long as the weather is good they do!

Recently I decided to try grilling lamb for dinner. Since it is the Loblaws Food alert item this month I just had to try it out.

Lamb Lollipops on the Barbecue

Ingredients
2 large garlic cloves, crushed
1 tablespoon fresh rosemary leaves
1 teaspoon fresh thyme leaves
Pinch cayenne pepper
Coarse sea salt
2 tablespoons extra-virgin olive oil
6 lamb lollipops, about 3/4-inch thick

Instructions

  • In a blender add the garlic, rosemary, thyme, cayenne, and salt.
  • Blend until combined.
  • Pour in olive oil and blend into a paste.
  • Rub the paste on both sides of the lamb pieces and let them marinate for at least 1 hour in the refrigerator.
  • Remove from refrigerator and allow the meat to come to room temperature; it will take about 20 minutes.
  • Start the BBQ up, add the chops and sear for about 2 minutes.
  • Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.


I did cook mine a little bit longer as my kids like their meat well done. Serve with potatoes, rice or a salad.

The kids just loved this so much! I cannot wait to make it again.
