Everytime the kids go back to school after a long break we are guaranteed to get sick. My immune system is pretty good but this time it got me. I pretty much knew it would since two of the kids were sick. One of my teens was actually home all week nursing a cold. I had hoped it would skip me but it snuck up and put me down for the count.
I had went to bed with a scratchy throat to wake the next morning to drop my husband off at the airport. As I kissed him good-bye I thought to myself I may be getting sick. But of course we kissed anyway LOL ON the way home I stopped and picked up some green tea and honey to help my throat. Went back to bed for an hour and woke up feeling sicker than I have in years. I had a fever and body aches and could not stand very long. For about 24 hours it was pretty rough and my children kept commenting on how they never see me sick.
The next day I felt better but the cough and throat irritation is still here a few days later. I had not been eating much and had no energy to workout until today. I knew I had to get nutrients back into my body and the best way to do that while warming up is soup. Since Chickapea is chocked full of essential nutrients: complex carbs, thiamine, folate, niacin, magnesium, B vitamins, iron, zinc and antioxidants, this was a perfect addition to my soup.
I made up a batch of the tastiest soup I have had in years. It contained everything my body needed to feel better and was eaten up quickly by the family. I was a bit surprised as it had veggies but they still ate it.
Chicken and Spinach Soup
Ingredients
- 2 boneless chicken breasts diced
- 1 tbsp olive oil
- 2 cups of Chickapea pasta organic chickpeas & Lentils (shells)
- 1 box of chicken broth 900 ml (no salt added)
- 1 cup of cherry tomatoes cut in half
- 2 cloves of garlic minced
- 1 onion diced
- 1 carrots sliced
- 2 cups of spinach
Directions
- Cook chicken in oil for about 5 minutes
- Add broth, tomatoes, onions, and carrots, heat to boil
- Add in pasta shells, and garlic
- Reduce heat and simmer covered for 10 mins
- Stir in spinach and cook for 5 mins
- Serve
This soup was full of protein and flavour. It warmed me up and filled me with all kinds of goodness.
