Chocolate Peanut Butter Cheesecake Truffles #DoYouSpoon

I was introduced quite late to the whole truffle thing. I had no idea I could make these tasty little bits in my own home and fill them however I wanted. Then my oldest who is an amazing cook came over and showed me how. Last year every party we were invited to I ended up bringing truffles. They were a huge hit and I never had leftovers. So now when I make them, I make lots as my family loves them .

Once you make one batch, you will find yourself changing things up and finding all kinds of yummy combinations. We love them dipped in milk chocolate and rolled in icing sugar or cocoa but coconut is great for dipping as is white chocolate. The filling possibilities are endless.

My family has a love for REESE Spreads and asked me to make them into truffles. I know this is just their way of being able to eat it on the go!

Chocolate Peanut Butter Cheesecake Truffles

Ingredients

8 oz of cream cheese (1 package)

1/2 cup REESE Spreads Peanut Butter Chocolate

1/4 cup powdered sugar

1/2 cup of semi-sweet chocolate chips

Cocoa powder or icing sugar (optional)

Directions

  1. Mix the cream cheese, REESE Spreads and powdered sugar in a medium bowl until all combined.
  2. Cover the mixture and refrigerate (1-2 hours) until firm.
  3. Line a cookie tray with a sheet of wax paper.
  4. Spoon the mixture onto the parchment paper in small balls. (think bite sized). Using your hands roll the balls to make them smooth, then place them in the freezer to harden( for 20-30 minutes)
  5. Melt chocolate chips on the stove. Let the warm chocolate sit for 5 minutes to slightly cool before dipping.
  6. Line another cookie sheet or flat container with wax paper and set aside. Using a fork or a toothpicks dip the bite-sized balls into chocolate. Cover them completely and place onto tray. Do this as quick as possible as the melted chocolate hardens quickly. You can add a drop of milk to make the chocolate creamier if needed.
  7. Roll each in cocoa powder, icing sugar or leave as is
  8. Store in the refrigerator.

These ones did not turn out as smooth or as round as the last batch. But they tasted amazing and the kids ate them all up quick! This recipe made about 20 bite sized Truffles. These are great for parties, snacks or to wrap up in pretty plastic for gifts.

I can not wait to make up some more! These will surely be part of our holiday baking this year.
