Crock Pot Shredded Chicken Tacos

Chicken is one thing everyone in my family will eat. I often cook a bunch ahead of time and use the leftovers to prepare other meals throughout the week. It is great in soups, sandwiches and casseroles as well as salads. With the kids being back to school and all of their schedules a bit busier these days, I find I am relying on my slow cooker a bit more.

The slow cooker is a great way to have a healthy and tasty meal ready when you need it with very little work. Below is a family fave and I allow the family to add what they want to their shells to make it perfect for them.

Crock Pot Shredded Chicken Tacos

Yields: 6-8 Servings

Prep Time: 15 Minutes | Cook: 6 Hours

Ingredients:

  • 5 boneless chicken breasts (3 lb package)
  • 1 packet of taco seasoning
  • 1 onion, diced
  • 1 (4.5 ounce) can chopped green chilies, undrained
  • 1 (14.5 ounce) can fire roasted tomatoes
  • ½ cup fresh cilantro, chopped
  • Corn or flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole, lettuce, tomato

Directions:

  1. Place chicken breasts in the bottom of crock pot
  2. Sprinkle taco seasoning evenly over the chicken and top with diced onion.
  3. Pour cans of fire roasted tomatoes and green chilies over the top.
  4. Cover and cook on low for 6-8 hours.
  5. Remove lid and shred the chicken with two forks. Add chopped cilantro and incorporate into chicken mixture.

This is a great recipe to have during sleepovers, before soccer practice or when you and hubs are going out on date night. Have everything prepped and waiting in the fridge so the kids can make theirs as they want. It is always a big hit here.

    This is a great recipe and I usually use red peppers in my tacos especially in the winter when the fresh tomatoes are tasteless
