Mini No-Bake Pumpkin Cheesecakes #DiscoverFreshContest

Ever since I was a little girl I have loved cheesecake! Two of my children have inherited this love as well. Whenever we go out for dinner, this is their go-to dessert. As much as we all enjoy eating it, I have never attempted to make it before. With only three of us being cheesecake fanatics, I tend to make desserts that I’m know everyone will enjoy. That is, until now.

These Mini No-Bake Pumpkin Cheesecakes are perfect for potlucks, parties, or when people have different tastes. You can make as many as you like and if needed, change up the filling to suit  varying tastes or seasons.

Being fall and everything is pumpkin, I could not wait to give these babies a try! The fact they are ‘no-bake’ really excited me.

I was able to pick up everything I needed for this recipe at my local Walmart store in the grocery section. The convenience of getting all of my shopping done in one spot makes this busy mama so happy. I love that they always have seasonal produce and great prices makes my shopping experience super easy and affordable.

Mini No-Bake Pumpkin Cheesecakes

Mini No-Bake Pumpkin Cheesecakes

Ingredients

  • 1/4 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 4 oz cream cheese, at room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup pure pumpkin purée
  • 1/4 tsp pumpkin spice
  • 1/2 whipping cream
  • mini chocolate chips (optional)

Directions

  1. Combine graham cracker crumbs with melted butter and stir well. Divide between 8 125 ml mini mason jars. (I used ceramic bowls) Use a small spoon or your finger to press mixture into an even layer. Chill
  2. Beat cream cheese with sugar in a medium bowl, using an electric mixer, until smooth and fluffy, 1 to 2 min. Beat in pumpkin purée and spice. Clean beaters and whip cream in a separate bowl until it forms stiff peaks, 1-2 min. Fold whipped cream into cream cheese mixture. Spoon over prepared bases. Top with chocolate chips. Chill until firm, about 3 hours. Serve chilled.

I am excited to make up some more of these yummy mini pumpkin cheesecakes. You can top them with grated chocolate, pumpkin seeds, or leave them with just whipped cream. However, you prefer! I am going to try this recipe with another fruit in the spring and see how it turns out. I bet it will be a hit!
