Yummy Southern Italian Turkey Pasta Puttanesca Recipe with Giveaway #TurkeyEveryDay

A part of my healthier living journey means cooking fresh local ingredients whenever possible. Now this may sound easy to many of you, however having a big family who is picky, it is not. Luckily for me they love meat and most of all, they love turkey. Turkey is such an affordable meat that it just makes sense to make meals from it as much as possible. We recently bought a deep freezer so we could stock up on whole turkeys when they are on sale. Usually this is around the holidays but if you watch local stores, you can keep an eye open for deals.

My problem is always what to do with leftovers. We love turkey roasted in the oven with veggies and can only eat so many sandwiches with the leftovers. But there are other recipes you can create with the tasty leftover turkey like this Southern Italian Turkey Pasta Puttanesca. It can be made using turkey sausage or leftover turkey.

With a combination of fresh veggies, Canadian turkey and a lighter pasta choice if you choose, this tasty meal fits well into healthier living options. Picky families will love it as well!

Southern Italian Turkey Pasta Puttanesca

Serves: 4-6

Prep time: 10 minutes

Cook time: 25 minutes

Ingredients:

2 cups grape tomatoes

1 tsp olive oil

3 cloves garlic, crushed

5 anchovies, finely chopped

2 turkey sausages

2 tbsp capers

½ cup sun-dried olives, chopped

2 tbsp fresh basil, chopped

1 tsp hot pepper flakes

350 gr pasta

8 cups water

1 tbsp salt for pasta water

1 tbsp olive oil

3 tbsp grated Parmesan cheese

Salt and pepper to taste

Instructions:

  1. Season tomatoes with olive oil, salt and pepper.
  2. Broil in the oven on the middle rack for 8 – 12 minutes until soft and lightly browned.
  3. Bring 8 cups water to boil; add salt.
  4. Add pasta and follow package instructions. Cook until al dente.
  5. Very important: reserve 1 cup pasta water and set aside.
  6. While pasta is cooking, heat ½ tbsp olive oil in a frying pan over medium heat.
  7. Remove casing from sausage and break up into 1-inch pieces. Add to pan and cook until browned and cooked through.
  8. Add anchovies and garlic and cook until anchovies dissolve and garlic is cooked through, 2-3 minutes.
  9. Add roasted tomatoes.
  10. Add olives and capers.
  11. Remove from heat.
  12. Add pasta directly to saucepan.
  13. Add ½ cup of the reserved pasta water and toss.
  14. Add fresh basil, hot pepper flakes and ½ tsp olive oil.
  15. Add up to ½ cup of additional pasta water, a little at a time, if pasta begins to dry out.
  16. Garnish with parmesan cheese and serve immediately.

TIP: This dish works well with leftover turkey too.  Just substitute the sausage for some cubed or shredded turkey breast or thighs for an equally delicious pasta dish.
