Versatile Make Ahead Turkey Meatball Recipe

Summer is pretty much here and the fun is about to begin! Long busy days filled with family fun, means less time to be in the kitchen cooking. I am starting to get into meal prep and cooking some of our meals ahead of time. Cutting things up and leaving them in the fridge ready to go as well as freezing meals for later int eh week. Saves time and helps my family maintain a normal schedule while eating healthy.

One of the meals I am excited about making ahead are the turkey meatballs. My kids love meatballs and will eat them on their own, on a sandwich, in pasta etc.

Versatile Make Ahead Turkey Meatball Recipe

Yields: 12 large meatballs

Prep Time: 5 minutes | Cook Time: 18-22 minutes

Ingredients:

  • 1 pound ground turkey
  • 1 pound ground pork
  • 1 egg
  • ¼ cup steel cut oats
  • 2 tablespoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¾ teaspoon black pepper

Directions:

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and set aside.
  2. Place all ingredients in a large bowl. Using clean hands, mix the ingredients – being careful not to overmix as this could result in tougher meatballs.
  3. Scoop the meat using a 1/3 cup measure (fill it just slightly full to get 12 meatballs). Lightly roll into a ball and place on prepared baking sheet.
  4. Bake for 18-22 minutes or until the meat is cooked through.

Freeze Option:

Simply allow the meatballs to cool, and then place them in freezer containers before freezing.

To use – place frozen meatballs on a baking sheet in a 350 degree oven. Bake for 10-12 minutes or until heated through.

I shared this recipe with a friend of mine and she is going to cook hers on the BBQ. I can not wait to see how they turn out.

We have a lot of people visiting in the summer, these will be great to have while entertaining. So fresh and tasty!

    I love turkey but I’ve never used steel cut oats, I usually just use breadcrumbs in meatballs. How did they turn out on your friends BBQ?

  11. These meatballs sound delicious but I think I would add some sage too just to spice them up a bit.I love the spice sage and add it to many of my ground turkey recipes.
