BBQ Bacon Wrapped Turkey Medallions with Grilled Peach Salsa Recipe #GrillCdnTurkey

As the weather continues to be warm and “summery”, we are finding ourselves outdoors more and more. Even on the days where I may personally be indoors with the AC, I am in no mind to be cooking in my kitchen. Who wants to heat up the house just to cook dinner? Most meals this summer have been on the BBQ or take-out, depending on our schedule. A part of me is looking forward to cooler temperatures so I can do some baking again.

Luckily both hubs and I love to barbecue and are both willing to lend a hand come dinner time. One thing about barbecuing is that your food locks in the flavour and it is easy to cook everyone’s meal exactly like they want. Some of my kids like things a bit more charred, others not so much. We have a large grill allowing for multiple foods to be cooked at the same time as well.

Usually by night the sun is down and the breeze cools things off so we can sit outside and eat. I think that is my most favourite thing about summer, eating outside. As we grill all year-long, but you can not really eat outside in a blizzard.

This yummy Turkey recipe is perfect for the grill. It is fresh and tasty with a delicious Peach salsa. If you can get your hands on some local peaches, that would be best.

BBQ Bacon Wrapped Turkey Medallions w/Grilled Peach Salsa

Serves: 4-6 people

Prep time: 20 mins

Cook time: 30 mins

Ingredients:

2 lbs Canadian turkey breast, boneless

4-6 slices of bacon

2 ½ tsp seasoning rub

For rub:

½ tsp garlic powder

½ tsp dried oregano

½ tsp sweet paprika

½ tsp dried rosemary

½ tsp dried thyme

For Salsa:

1 large firm peach

1 red pepper

½ small red onion

4 leaves basil

2 tbsp olive oil

1 tbsp apple cider vinegar

Salt and pepper to taste

Instructions:

  1. Cut the turkey breast into 2-inch steaks.
  2. Wrap each steak with one slice of bacon.  Secure with a skewer through to both sides of the bacon wrapped steak.
  3. Season with salt and pepper to taste.
  4. Combine the spices to make the seasoning rub.  Rub each steak generously on both sides.  
  5. Grill steaks over low-medium heat for 10-15 minutes per side until meat is cooked through and registers 165°F (74°C) on a meat thermometer inserted into the thickest part of the meat. (Heat setting and cook time will depend on the power of your BBQ.)
  6. While steaks are cooking, make the salsa.  Cut the peach in half and remove the pit.  Grill over high heat until the peach is slightly charred but still firm, 2-4 mins.  Remove from heat and dice.
  7. Dice the red pepper and onion.  Tear the basil into small pieces.
  8. Combine the peach, onion, red pepper and basil.  Dress with olive oil and vinegar. Add salt and pepper to taste.  Serve alongside the turkey steaks.

TIP: Use turkey bacon for a lighter, healthier version of this recipe.

There are plenty of cuts for quick cooking too.  Turkey sausages, turkey breast steaks, drummettes and wings, thigh or breast kebobs and ground turkey – your local grocer or butcher carries a host of options for you to try.  These cuts are best suited for grilling over medium to high heat and will usually cook up in a pretty quick time.  Cooking a big batch of turkey on the barbeque gives you options to get creative with so many of your favourite summer dishes.

Here are some tips to help you get the most flavour out of your favourite turkey grilling recipes:

  1. Learn to use direct and indirect heat. Direct heat works best to sear turkey, develop savoury crusts on your cuts, create flavourful grill marks and cook smaller or thinner cuts of meat quickly.  Indirect heat works for larger cuts of meat that need to cook low and slow, coaxing out flavours while keeping cuts moist and tender.
  2. Smoke and sizzle mean big flavor. Use the barbeque to brown your turkey and create caramelization that adds big, bold flavour and keeps your meat juicy and tender.  Smoke adds that unique and special BBQ taste, allowing you to cut down on salt, sugar and fat.
  3. Preheat your grill to hot so that food will sear on contact and avoid sticking.
  4. Clean your grill thoroughly before you begin to barbecue to remove any pieces of old food and any burned bits that can make your food taste bitter.
