Where did the summer go? Two of my four kids will be going back to school in just a few weeks. I am not really ready. But I am not stressing either. They are all pretty independent and school brings routine. I welcome routine. I will be sad to have less time with them, but routine is good. I must admit summer meals are usually grab and go. Unless we plan ahead and have BBQ. Life is pretty laid back during the summer so back to school lunches will take some getting use to again.
No matter how much I send my kids to school with for lunch, they always come home so hungry. I am not sure if it is because they are not constantly in-front of the fridge grazing or if their brain and bodies are working overtime causing them to be more hungry. Either way, after school is a busy snack time in our house. When the kids get home I am usually in the middle of work or housework or running errands. It is a busy time of day and I just do not have time to stop and make snacks. So I need easy to make snacks that the kids can grab and go themselves.

With a little planning, back to school will quickly be back to routine and we will all be missing summer and the lazy days we have been enjoying.
