Blueberry Breakfast Bread Recipe

I love this time of year so much! I can open my windows and let the fresh air in while enjoying some time in the kitchen. This time of year is all about the comfort foods. The yummy warm foods that make you feel good and remind you of simpler times. For me this would be when I was a little girl visiting my grandma and helping her in the kitchen. Such great memories. Now my youngest loves to help me int he kitchen. This yummy recipe is great for the Fall and perfect for school lunches.

I have so many blueberries left from the summer sitting in my freezer. I can not wait to get making this!


Yields: 2 loaves (9 x 5” pan)

Prep: 30 minutes | Bake: 50 minutes | Total: 1 hour 20 minutes


2 cups fresh blueberries

3 1/8 cups all-purpose flour

2 cups white sugar

1 tablespoon ground cinnamon

1 teaspoon salt

1 teaspoon baking soda

1 ¼ cups vegetable oil

4 eggs, beaten


  1. Preheat oven to 350 degrees F. Grease two 9 x 5” loaf pans.
  2. Combine flour, sugar, cinnamon, salt and baking soda in a large bowl; mix well.
  3. In a medium bowl, blend oil and eggs into blueberries.
  4. Add blueberry mixture to flour mixture, blending until dry ingredients are just moistened. Divide batter into pans.
  5. Bake in preheated for 50 minutes, or until a toothpick inserted in the center of each loaf comes out clean.

Notes: This is a great basic breakfast bread recipe that can be changed by substituting the blueberries for 2 cups of your favorite fruit (chopped). Since this recipe makes two loaves, one can be frozen to enjoy at a later date.

    Sounds like a delicious way to use my mounting supply of blueberries in my freezer. (Our blueberry bush was loaded this year.)
