Light and Easy Turkey A La King Recipe with Giveaway #TimeForTurkey

I think it is finally safe to say the cold winter weather is behind us! Today I had my windows open and went out in a tank top. I was even looking for new flip flops to wear as it has been so warm here in Western Canada all week. Some days it was pretty close to 30 degrees! I love the sun but am not a fan of the heat so I would be happy if it just stayed this temperature all summer. With the warmer weather we are finding ourselves outdoors more. We are even entertaining more and having guests over on the deck for drinks and a bite to eat.

It is the season for many occasions to gather with family and friends.  Celebration meals become the centerpiece for casual and formal get-togethers, and planning is an essential step in being prepared to easily feed a crowd. Mother’s Day, Victoria Day, Father’s Day, communions, confirmations and graduations are some of those special occasions where you want your meal to shine.  We even have a few birthdays thrown into the mix to keep things extra busy. At the same time, busy days and schedules mean you still need to think about family meals, snacks and lunches.  With so many celebrations around the corner, plan ahead to help make family dinners extra special, not to mention easy, manageable and economical, too. I love to cook up a turkey on a cooler night and separate it for leftovers and other meals throughout the week to come. This is a great way to ensure you have lunches and some quick meals prepped ahead of time. Plus with turkey you know you are feeding your family a healthy recipe they will be coming back for more of.

Cooking a turkey helps me take the stress out of meal prep. It is one of those foods my entire family loves and are always looking forward to.

A great recipe to make for your family on a busy night with your turkey is Turkey A LA King. Check out the recipe below and let me know what you think.

Light and Easy Turkey A La King

Prep time: 10 minutes

Cook time: 30 minutes

Serves: 6-8

  • 3 cups leftover cooked Canadian turkey meat, cubed
  • 1 tbsp olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, crushed
  • 1 cup turkey broth
  • 1 cup 2 % milk
  • 1/2 cup white wine
  • 1 cup frozen peas
  • 1 cup asparagus, sliced
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • ¼ tsp nutmeg
  • 3 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • 2 packages pre-made puff pastry cups (fresh or frozen)

Instructions:

  1. Heat olive oil over medium heat.
  2. Sauté onions until translucent and cooked through, but not browned, 5-8 minutes.
  3. Add garlic and cook for an additional 1-2 minutes.
  4. Deglaze with white wine.
  5. Remove onion mixture from the pan.
  6. Add flour to the pan and cook over medium heat until lightly browned.
  7. Add butter and stir until melted and incorporated with flour.  Mixture should appear crumbly.
  8. Slowly add broth and milk in increments and stir until flour and butter mixture has dissolved.
  9. Add the bay leaves, nutmeg and thyme.
  10. 10.Heat and bring to a gentle simmer until mixture begins to thicken, 6-8 minutes, stirring continuously.
  11. Add onion mixture, turkey, asparagus and peas.  Season with salt and pepper to taste.
  12. Stir gently and heat until asparagus and peas are tender and cooked, 3-5 minutes.  Remove bay leaves and discard.
  13. If using frozen puff pastry cups, bake according to package directions.  
  14. Ladle into pastry shells and serve immediately.

TIP:  There are a few ways you can lighten up this recipe even further :

  • use only turkey breast meat
  • use skim milk instead of 2 percent
  • use low fat turkey broth or vegetable broth
  • serve over rice or noodles instead of puff pastry shells
