The holidays are here and people soon will be travelling to spend time with loved ones. In our family food is our love language. So big meals, yummy desserts and lots of friendly chatter will fill our home this season. Growing up my grandmother always made a big turkey and the family would bring salads and desserts. Then as the family grew, my mom would make dinner for my sis and I and our families. Now being in BC I am the one who does the cooking. It takes a lot of time to prep for the perfect family dinner, but it is worth it!

Mini Puff Pastry Turkey Pot Pies

Serves: 8-10
Prep Time: 20 mins
Cook Time: 20 mins

Ingredients:

3 cups turkey leftovers, cubed
2 tbsp olive oil
2 cups leeks, finely chopped
2 cups mushrooms, cubed
1 cup celery, finely chopped
1/2 cup white wine
2 tbsp cornstarch
1 cup turkey broth
2 sheets store bought puff pastry, thawed according to package directions
Salt and pepper to taste
Non-stick cooking spray
8-10 small ovenproof containers

Instructions:

Heat olive oil. Sauté leeks in a non-stick frying pan until softened and lightly browned, 2-3 minutes.

Add mushrooms and celery and sauté until cooked through and browned, 6-8 minutes. Season with salt and pepper to taste.

Deglaze with white wine.

Sprinkle cornstarch over vegetable mixture.

Add turkey broth and mix thoroughly. Bring to a gently simmer and continue to stir until broth thickens to a gravy. Remove from heat.

Mix in leftover turkey.

Spray small ovenproof containers with non-stick cooking spray.

Generously fill each container with turkey vegetable mixture.

Top each container of turkey mixture with puff pastry.

Bake according to package directions.

TIP: Make filling up to 3 days in advance and refrigerate until ready to use
