My thoughts:  First and foremost WOW the photos in this cookbook are so fabulous they will have you drooling right away. This is a beautiful hard cover cookbook that I would also describe as a small tour of Belize. Before each and every chapter there is a couple pages to tell you about each culture; Maya, Mestizo, Creole, East Indian, Gerifuna, Lebanese, Chinese, Mennonite, Caribbean and British. A bit of history to learn more about there country and food.

If you love seafood this is a book for you as it is filled with great seafood recipes. As I went through this book from cover to cover I noticed right away how simple the recipes are. They are laid out with two or more recipes on one page with the other page being a full page beautiful photo. The food stylist and photographer did a fabulous job. I love cookbooks like this as you can see what the foods look like and almost taste them while you look at the photos.

For the most part the ingredients in each recipe are easy to find in your favorite grocery store. Some ingredients would be need to purchased in specialty stores and a few ingredients I had to look up online as I wasn’t sure what they were. Each recipe has a fairly short ingredient list and easy directions that a not huge and scary for beginners in the kitchen. This is a great way to share different cuisines with your family at dinnertime.

There were many of my favorite recipes included in this book and I look forward to trying everyone of them; rice pudding, hummus, black bean hummus, guacamole, Tortilla soup, and so many more. There are also many recipes I have not tasted that have peaked my interest; Old fashioned seafood soup, Curry Pork chops – Chinese style, Tavern jerk chicken, fudge, and caramel cake.

I am planning on making the Caramel Cake for my husbands birthday at the end of the month and found the way they make the caramel to be really interesting. You can make the caramel with a can of sweetened condensed milk in a pressure cooker. If you do not have a pressure cooker you boil you can of sweetened condensed milk for 2 hours on the stove, cool and then it is caramel.

  3. I too love a cookbook with great pictures and when they offer you backstory with the recipes. It provides you with more than just a cookbook to toss on the shelf.
