I experiment in the kitchen a lot. Sometimes it’s a bust and we end up eating pb &j sandwiches but this adventure was a success. With a 50 hour work week between college and working in a child care center I struggle with getting healthy meals on the table on weekdays. Quite often I cheat and use bagged salad and rely on pre-made veggie and fruit trays. They aren’t as cost effective as chopping and preparing them myself but it saves us from turning to take out on the way home after a long day.
Wholly Guacamole Salad Dressing
I whipped up:
1/4 cup of guacamole,
1 tablespoon of fresh lime juice,
2 tablespoons of mayonnaise
Then I tossed my favourite salad veggies in the dressing and crunched up some flax seed chips on top instead of croutons.
