You may remember me mentioning my oldest is in college for cooking. Below is her latest in class creation. It looks so good! I can not wait to try it out.
Linguine Vonghole:
10 ml olive oil
8 pasta clams
1/4 cup dry white wine
Rinse the clams under cold water. Have two pots of water with salt on high heat.
Also have a medium sauté pan too. Add the oil, clams and white wine to the pan on medium heat. Put a lid on top and wait 3-4 minutes for the clams to open.
Olive oil
3 cloves garlic, thinly sliced
2 green onions, thinly sliced
1 teaspoon (or to taste) hot chili flakes
Approx. 125 ml. chicken stock
30 ml. Clam juice
2 tablespoons butter
In medium pan sauté the garlic, onions, and chilli flakes. Few seconds later add the chicken stock, clam juice, clams, and 2 tbsp. of butter. Reduce a little bit and add the noodles.
120 gr. Cooked linguine
Once water is boiling add the noodles. Toss the noodles around with the end of a wooden spoon. Wait for them to float to the top then take 1 ½ minutes to cook from that point. Strain noodles.
1 tbsp. Italian parsley, finely chopped
When plating add the noodles first then the clams on top with chopped parsley.
Serves 2
I love eating clams, but have always been intimated by the idea of cooking them myself. Your daughter makes it sound easy (and look delicious!), I may have to give this one a try.
